The Cellar


From the vineyard to bottling, through the winemaking process


After being harvested at peak maturity, the grapes are quickly transported to our nearby cellar. A rigorous quality control is then carried out based on various criteria, such as the grape variety and the quality of the clusters. The grapes are then gently pressed using a pneumatic press.

Our modern winery is equipped for all types of winemaking, whether for red, white, or rosé wines. For the majority of our cuvées, vinification, aging, and storage take place in stainless steel tanks fitted with temperature control systems. This constant thermal monitoring ensures fresh, aromatic wines with excellent balance.
We also utilize traditional underground glass-lined vats, oak barrels, and a temperature-controlled concrete tank reserved for our premium cuvées. This ultra-modern spherical tank offers exceptional thermal properties and allows for micro-oxygenation. Thanks to its rounded shape, it enables a more homogeneous aging process for our Nantes wines, adding greater aromatic complexity and structure.

Aging on the lees


Our Melon de Bourgogne grapes are aged ‘sur lie’ (on the lees) in strict accordance with the Muscadet appellation standards. This traditional aging process involves keeping the wine in contact with its fine lees until it reaches its full potential.
Through regular bâtonnage (lees stirring), the yeasts are reincorporated to release a maximum of aromas and enhance the complexity of our future crus.
Aging on the lees imparts our Muscadet with its signature freshness and inimitable ‘perlant’ (a delicate, natural spritz). This method also significantly enhances its cellaring potential, allowing the wine to evolve beautifully for several years.

We operate our own in-house bottling and packaging line, allowing us to master every stage of the process—from the moment your order is received to the final dispatch. Whether in bottles or Bag-in-Box (BiB), our specialized equipment ensures your orders are prepared with maximum efficiency and precision, guaranteeing a fast turnaround.
